Stay for a weekend experience

Book 27-29th September 2024

It’s very exciting to be cooking in my homeland of Wales. We will be cooking over fire, using the beautiful local produce alongside my fantastic teams and the fforest family.”

Tomos Parry
Executive Chef & Owner of Mountain, Brat and Brat x Climpson’s Arch

-

Join us for the weekend and experience more of fforest and immerse yourself in the whole moment of our two teams coming together including, talks, walks and more.

Words from tomos

We’re very grateful of this opportunity to bring some of what we do in London to this part of Wales. Some of our teams are well used to using the phenomenal produce from Wales, but may have not been lucky enough to spend time cooking and absorbing it’s landscapes. We hope this will be an opportunity to immerse ourselves in this part of Wales and produce a set of delicious and exciting dinners for our guests.

The menu’s at Brat & Mountain are deeply inspired by the Welsh sea’s and mountains and the menu’s for the weekend will also be influenced by what comes out of the pristine oceans off the coast of St David’s and what’s growing in the hills surrounding.

Expect some Brat and Mountain classics, such Pembrokeshire Lobster Caldareta, Spider crab and seaweed omelettes, grilled local wild mushrooms and breads made with flour stone milled nearby at Felin Ganol. We will use our Mountain organic butter which is churned up the road at Caws Teifi, shellfish caught off the Pembrokeshire coast and seaweed harvested by Car y Mor.

Words from fforest

There have been multiple connections linking us together including, friends, family, rugby and Wales. Our love of the simple pleasures we bring our guests felt like the perfect match to do something together so when Tomos was looking to put on a dinner in a derelict lifeboat station, we said maybe it might be a tad easier to try it at the farm first.

We look forward to welcoming you all to far-flung west Wales to look after you all weekend, peaking at a very special meal with Tomos and the team.
