BRAT & MOUNTAIN
at FFOREST

For one weekend, Michelin-starred chef Tomos Parry brings his three London restaurants, Brat, Mountain and Brat x Climpson's Arch, home to Wales. Now in its third year, this is the biggest gathering yet: over 30 chefs, bakers, sommeliers and collaborators travelling from London to cook on farm, using nothing but fire and the best of what West Wales can offer.

In the days before service, the team will build their pantry the way Tomos always intended, gathering the best local produce, wild-caught, farm-grown and stoneground, straight from the people who make it. What they find becomes the menu, cooked over fire in Tomos's signature style, so every plate carries something of the land it came from.

Beyond the table, the weekend is a chance to slow down and celebrate the farm itself, with walks, talks and workshops woven through, alongside guest chefs, artists and makers exploring the traditions and landscape that shape this corner of Wales.

Tomos grew up in Anglesey, in the mountains and the seafood kitchens of the North Wales coast, and that connection runs through everything his teams cook. Returning to fforest each year lets him bring his London teams back to where the ideas started, and share that with the people who join us.

For dinner-only bookings, the Mountain dinner will be served on Friday 18th September. For guests staying at fforest farm for the weekend, dinner will be on Saturday evening.

tomos PArry

Born in Anglesey, Tomos Parry’s Welsh heritage deeply informs his approach to food. Growing up exploring the mountains of North Wales and working in seafood restaurants along the coast, his connection to the land and sea runs deep.

Growing up in the Welsh speaking communities on the Menai Straits, Parry honed his craft in local restaurants in Wales before moving to London and working in restaurants such as River Cafe before opening Kitty Fisher’s, refining his passion for hyper-local, seasonal cooking over fire. His signature approach—fire-led cookery rooted in naturalism

Each of his restaurants are inspired by Welsh produce and traditional food culture. This September, they will come together to explore the flora and fauna of West Wales in a celebration of place and plate.

fforest

fforest was created 20 years ago by James Lynch and Sian Tucker, drawing on their backgrounds in design and illustration. Their vision was to create a place where guests could stay, play and dream in a pristine natural environment, embracing the simple pleasures of spending time outdoors. It is a place that encourages engagement, collaboration and creativity. A place where magic can happen. 

Since 2008 fforest has been hosting family holidays, festivals, feasts, events and weddings. Gatherings that endorse a sense of community. The accommodation, made from reclaimed timber, stone and slate and decorated with traditional locally made Welsh textiles, combines warmth, craft and comfort in both spirit and thoughtful design.

Set in the wild landscape of Cardigan Bay, with all of the wonderful produce that the land, river and sea has to offer, fforest is the perfect setting for this special partnership. Made for sharing good food, great company and inspiring stories.

The menu won’t be finalised until the week, as we will be speaking to farmers, fishermen and local growers when we arrive, finalising the menu as we see the produce in person.

This is very much a grown-up weekend and not suited for children

Dogs are welcome, but not to the Cedar barn for the Mountain dinner service.

Garden Shacs & Hill Shacs
Please note
that for this event we sell the bedrooms in the Garden Shacs individually for up to 2 guests and you will share the shower/toilet facilities and outdoor seating area with the guests in the other two bedrooms of the Garden Shac.
There is also the option to book the complete unit for up to 6 guests.

For the Hill Shacs we sell them as 2 bedroom suites for up 4 guests and you will share the kitchen/dining area area with the guests in the other two bedrooms of the Hill Shac.
There is also the option to book the complete unit for up to 8 guests.
